Unlike preparing other dishes, beans require some preliminary preparation. Namely, the night before you prepare the beans, soak them in a pot of water and let them stand overnight. In this way, the beans will soften and swell.
You can start preparing lunch only the next day. There are various recipes for preparing beans, which differ mainly in some of the foods that you can add to the beans if you wish, but the process is essentially the same.
Below we will show you how to make delicious beans.
Ingredients:
350 g of beans
1 head of onion
Dry meat or sausages
A little bacon (optional)
Cayenne pepper
Spice C
Flour for sprinkling
Way of preparation:
The beans, which were submerged during the night, must first be picked, i.e. clean it and remove the damaged grains, then wash it and boil it in a small pot. Boil the beans for a few minutes, then drain them and pour new water into the pot and repeat the whole process one more time.
Then, the meat that you put in the beans in the form of dry bones, dry ribs, smoked pork knuckles or pork legs, should be washed and boiled in a separate pot, in order to wash off all impurities or soot from smoking.
While you are waiting for the beans and meat to boil, in the pot in which you will cook the beans, fry one finely chopped onion in very little oil and while constantly adding water, so that the beans soften. It is necessary to add water non-stop so that the beans do not burn. Simmer the onion for a few minutes, then remove the meat from the stove and wash it again. Also, remove the beans from the stove and strain them. After that, put the meat in the pot where you are stewing the onion, then add the beans and pour water. When the beans boil, reduce the heat and let the dish simmer for the next 2 or 3 hours.
If you add sausages instead of dry meat, the entire cooking process is the same, only sausages need to be added towards the end of cooking. They need to be simmered a bit before adding the sauce to the beans. It is recommended that, if you make beans for two days, you first add dry meat to it, and on the second day, when you eat the dry meat, you can add sausages to the beans.
The beans are cooked when they are completely soft. Before adding the spray, you need to add a certain amount of liquid to the pot and let it boil again. Only then is the sprinkle added.
Making a splash. To make the bean paste, first heat the oil in a pan and add some flour, and as soon as the flour turns golden, add one spoonful of allspice and fry all the ingredients. The splash is ready when it turns a nice orange color. Then, put the resulting spray into the beans and mix it with a blender. Let the beans boil for a few more minutes, and at the end taste them and add spice C if desired. This amount of beans is enough for 5 people.
If you reheat the beans the next day, put them on low heat and add one cup of cold water, then stir gently so that they don’t stick to the pan. When the beans are sufficiently soupy, increase the heat on the stove a little, but do not put it on the highest heat, because it will burn.
